4 cups chopped nectarines
1/2 cup brown sugar
1/2 cup white sugar (optional)
1 cup rice-wine vinegar
2 small red onions (~ 1 1/3 c.)
4 jalapenos, seeded and minced
2 2-inch pieces lemongrass base, minced
1 stalk lemongrass, chopped into 3-inch pieces
1/4 cup chopped fresh basil, possibly more
1/2 tsp. salt
1 whole lime, thinly sliced in quarters
10 balls allspice
Bring all ingredients to a boil; turn the heat way down and simmer for 15 minutes.
Cover and let sit overnight.
Next day, cook down to desired consistency and seal in jars.
